Happy Sunday! Today I wanted to share my super easy recipe for fig butter and brussels sprouts pizza! This recipe is delish and a great vegetarian option. I love brussels sprouts so much and I really feel like they are the new kale. The key ingredient to this pizza is Trader Joe’s Fig Butter. This fig butter contains no actual butter and is more of a jam. This fig butter spread is amazing and makes a great base for pizza. Trader Joe’s has the best stuff!

Ingridents:
- 1 pre -made pizza crust (use what you like)
- 1 shallot
- 2 small cloves of garlic
- 15 fresh brussels sprouts (or you can use shredded brussels sprouts)
- 2 tablespoons Trader Joe’s Fig Butter
- 1 cup mozzarella shredded cheese
- 1/4 cup parmesan cheese
- 1 tablespoon olive oil
- 1 tablespoon butter
- Pinch of salt


Directions:
- Finely chop shallot and garlic cloves ( you can use less garlic if you like)
- Slice brussels sprouts in half
- Add olive oil and butter to a pan on medium heat
- Add pinch of salt to pan
- Add the shallot and the garlic to the olive oil and butter mixture
- Add sliced brussels spouts to the shallot and garlic mixture
- Saute shallot, garlic and brussel sprouts mixture until soft and slightly browned
- Spread fig butter on pizza crust ( I use the back of a spoon to spread it)
- Sprinkle half of the 1 cup mozzarella cheese on top on the fig butter
- Sprinkle shallot, garlic, and brussels sprouts mixture over the cheese and fig butter (make sure it is evenly spread out )
- Sprinkle the rest of the mozzarella cheese on top of the brussels sprouts mixture
- Sprinkle the parmesan cheese on top of the mozzarella cheese ( all over the top of pizza)
- Bake at 375 degrees for about 15 minutes (or until cheese is melted and crust is browned)
